Strength

Weak mix - to be mixed with one of the flours from the Tradizione Line, depending on the intended use.

Strength refers to the ability to form the gluten network (which retains more or less carbon dioxide) and the power to absorb liquids. The proteins responsible for gluten formation are two insoluble proteins: gliadin and glutenin.

Weaker flours form a gluten network that retains less carbon dioxide and has reduced liquid absorption. Weaker flours are more suitable for preparations that do not require a proofing time.

Strong flours are rich in gluten, absorb liquids to a greater extent, and retain more carbon dioxide. The doughs are tenacious, highly elastic, and suitable for long proofing times.

Five Cereal Shortbread Cookies


Ingredients:


  • 250g of Five Cereal flour
  • 25g of cornstarch
  • 100g of butter
  • 130g of sugar 
  • 2 eggs
  • vanilla extract
  • Powdered sugar for dusting after baking

Cut the butter into cubes and combine it with the flour and cornstarch.
Add the eggs and sugar, and work everything together until you obtain a homogeneous mixture.

Ottima miscela. Già nell'autolisi sprigiona un profumo incredibile. Per il pane ho usato un 30% di farina 0. Il risultato è ottimo, la consiglio

Farine di qualità (soprattutto panificazione)

Cliente da anni, non un grande consumatore, ma fedele al prodotto. Secondo il mio parere la 5 Cereali con la base della 00, è il top. In alternativa anche il Farro (normale) è ottimale. Grazie anche per la dritta della lievitazione in frigo. Funziona. Comunque, da profano, continuerò as usare i Vostri prodotti.
