Production and supply chain
The arrival of the wheat and the first selection are very important phases for the production of high-quality flour. We have an internal analysis laboratory that checks the incoming wheat and the outgoing flour to ensure food safety and the excellence of our product, in addition to certified external laboratories for specific controls throughout the processing.
Milling is the "flaking" of the grains: the outer layers are removed from the flakes to extract the starchy part.
Sifting classifies the product by size: flour, semolina, bran, bran flour, and middlings.
During this stage, impurities such as dust, straw, pebbles, and seeds of different cereals are extracted from the grains. The grains are then treated with water and left to rest in storage cells for a period ranging from 12 to 40 hours, depending on the hardness of the grain. The water treatment improves the milling process.
After milling, the flour is left to rest to allow natural biological processes to do their work and deliver us a "balanced" flour, ready in all its aspects. In packaging, transportation, and delivery, you will find the same care that we put into every phase of the production process, with vehicles dedicated solely to flour transportation and suitable for preserving its integrity and flavor, as well as a staff trained to move and store the products in the best possible way.
The supply chain
We share principles and values with our partners, including respect for nature in all its forms. We carefully select our wheat suppliers, evaluating their geographical proximity, the quality standards of the raw material, the use of the land to preserve it and to maintain all the organic material necessary for the healthy growth of each ear of wheat. We wholeheartedly believe in the power of supply chain projects and for this reason we have created AmorBimbi and the line of Flôr di Lune organic flours, two projects focused on sensitivity and sustainability for the environment, for those who are here today and for those who will be here tomorrow.
FLÔR DI LUNE
Flor di Lune is the result of a perfect combination of care, slowness, and passion first in the field, then in the mill, and finally in the oven. The protocol requires that in each phase, we commit to respecting the natural rhythms of the Earth, Moon, and Sun so that all vital impulses can develop to their fullest and then remain enclosed in the wheat grain, flour, and bread.
Each step is made up of small and simple gestures that bring us back to the earth and its precious fruits, to transformation in purity, to the calm of leavening, to the scent of true bread, the one that tastes good, the one that grandmothers used to make at home until a few decades ago.

AMORBIMBI
In March 2021, AmorBimbi was born at Molino Moras, an innovative soft wheat flour designed for dedicated and conscious nutrition for children and adults over the age of three.
AmorBimbi is the result of a three-year collaboration with the Higher Institute of Health, certified by the impartial body DNV GL for the absence of glyphosate and pesticides and for an 80% reduction in mycotoxins compared to the maximum limit set by European Union law.
