Water combined with flour makes it possible to form the dough and gives it structure. You use between 40% and 70% of the weight of the flour (or even more), depending on the product you want to obtain.
Water must be clear and colorless, and its usage temperature is important to obtain a homogeneous, relaxed, and light dough.
The optimal temperature of the dough at the end of the process is around 25°C. Final temperatures above 28°C, in particular, will cause damage to the gluten structure and could compromise the final product’s success.
To stay within the optimal range, you can calculate the water temperature to use for the dough in advance. This will depend on the ambient temperature during mixing and the method used for mixing.
For this calculation, it's assumed that the flour used is at the same ambient temperature where mixing occurs, so its estimated temperature will be -1°C compared to the ambient temperature.
